Simple Garlic & Tomato Goat Stew

A rich, comforting goat stew made with simple ingredients and slow-cooked until tender. Bone-in goat adds deep flavor to the broth and works especially well with potatoes, carrots, tomatoes and herbs.

Ingredients

  • 2 lb bone-in goat stew meat
  • 2 tbsp cooking oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 can diced tomatoes, 14 oz
  • 2 cups beef broth or water
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 carrots, chopped
  • 2 potatoes, chopped
Step by step

Instructions

  1. 01Pat the goat meat dry and season with salt and black pepper.
  2. 02Heat the oil in a heavy pot or Dutch oven over medium-high heat.
  3. 03Brown the goat meat well on all sides, working in batches if necessary.
  4. 04Remove the goat meat from the pot and set aside.
  5. 05Add the chopped onion and cook for 4–5 minutes, until softened.
  6. 06Add the garlic, paprika and thyme. Cook for about 30 seconds.
  7. 07Add the diced tomatoes and broth.
  8. 08Return the goat meat to the pot and bring to a gentle simmer.
  9. 09Cover and cook over low heat for about 1½ hours.
  10. 10Add the potatoes and carrots.
  11. 11Continue simmering for another 30–45 minutes, or until the goat is tender and pulls easily from the bone.
  12. 12Taste and adjust the seasoning before serving.
